Practices
Microgreens and sprouts differ in how they are grown and consumed. Sprouts are germinated seeds grown in water without soil or sunlight and are eaten whole—root, seed, and shoot—usually within 3-7 days.

Microgreens are grown in soil or growing medium in a greenhouse or indoor light, allowing them to develop leaves. Harvested at 7-21 days, only the stems and leaves are consumed. While both are packed with nutrients, microgreens generally have more fiber, while sprouts are milder and juicier.
